Avoid gluten induced brain fog with vegan queso and vegan lemon bars

Years ago, while I was on a super strict Paleo diet during a phase of doctor observed food elimination for health observations and triathlon training. Food elimination helps see what you may or may not be allergic too.

After countless hours of training my body would crave sweets instead of salt, which was new because normally I prefer savory over sweet on a day to day. While still needing salt to replenish my electrolytes, I wanted to find a salty sweet treat that would be satisfying and healthy for me.

Having to get creative I leaned on other food bloggers who had mastered to art of real food based treats that wouldn’t leave you with a sugar crash or gluten induced brain fog. These bars were one of my top sweet treats I’d keep in the freezer on the regular. I would freeze them to keep me from plowing through the tray in a day. These taste like sunshine!

Meyers lemons vs regular lemons
Meyer lemons are a sweet winter citrus, many think it is a cross between a regular lemon and a mandarin orange. Meyer lemons have a deep yellow smooth skin and darker pulp. They are typically smaller in size and rounder than standard lemons. The Meyer rind is more fragrant when zested. Meyer lemons don’t have the same zing as regular lemons. Instead, they’re much sweeter.
