Description

If you love a good broth style Tortilla Soup and don’t have hours to make one then look no further. Save this recipe to your Pinterest board immediately! This fall and winter I’ve been rotating just a few soups over and over. Been freezing in glass containers for busy weeknights and quiet weekends. It is a one pot meal, I used Crockpot Express (pressure cooker) and the Vitamix step is optional, refer to instructions and notes for more.

Soup

  • 11/2 tbsp avocado oil
  • 1 large yellow onion, diced
  • 6 garlic cloves, chopped
  • 2 cups carrots, cleaned, diced
  • 1 cup celery, diced
  • 1 14.5oz can diced fire-roasted tomatoes
  • 2 lbs boneless, skinless, fresh chicken breasts (thawed)
  • 1 can black beans, drained, rinsed
  • 4 cups quality chicken bone broth
  • heavy dash of chipotle sauce
  • 2 cups filtered water
  • 2 tsp Celtic sea salt
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 1 tsp dried oregano
  • 2 limes, juiced

Garnishes:

  • Sliced ripe avocado
  • Sliced raw radish
  • Shredded raw cabbage
  • Shredded cheese
  • Lime slices
  • Cilantro
  • Tortilla Chips or strips
  • Sliced green onions
  • Sliced raw or pickled jalapenos
  • Dairy or non-dairy plain yogurt or sour cream

Instructions

  1. Use a Crockpot Express Pressure Cooker for this recipe. Prep all veggies ahead of time, the recipe moves quick. Set it to sauté setting, add avocado oil, onion and garlic for a few minutes then add carrots, celery, stir and cook another few minutes.
  2.  Add in the whole can of fire roasted tomatoes, chicken bone broth, drained black beans, water, spices, salt and of course the chicken breasts. Stir to combine, and seal lid to “lock” position. Set to Pressure setting Soup/Stew on high for 15 minutes.
  3. Once done, release steam valve before opening the lid. Be cautious and aware that HOT steam will be released from the valve as well as once the lid is open.
  4. Remove chicken breasts and shred with forks and return to soup and stir to combine.
  5. *Optional step: pull about 1-1/2 to 2 cups of soup and blend in Vitamix on high for a few seconds. Add back into Crockpot and stir.
  6. Add lime juice, stir, taste to see if more salt, spices or dash of chipotle sauce needs to be added. 
  7. Ready to serve or allow to cool before storing in glass containers with sealed lids for leftovers and freezing.

Notes

  • If new to Pressure cooking and using an InstaPot or Crockpot Express please read manufacturers instructions before use.
  • Use certified Organic ingredients when possible
  • Use BPA-free canned goods when possible
  • Blending some of the soup in a Vitamix or other high powered blender and adding it back in adds thickness without adding anything extra like heavy cream, corn starch or arrowroot.
