Description

Garlic infused oil and crispy garlic crisps are the shining stars of this dish. A creamy, garlicky dip and spread good for raw veggies, sandwich spread, crostini’s, pizza or pasta topper too!


Ingredients

Dip Ingredients-
•1 cup plain unsweetened Greek yogurt
• 8oz ricotta (set out a room temperature)
•1/2 tsp sea, Himalayan or @celticseasalt, plus more to taste
•1/2 tsp freshly ground black pepper, plus more to taste
•6 garlic cloves, smashed, peeled, finely chopped
•2 tbsp organic extra virgin olive oil 

Topping Ingredients-
•4 tbsp organic extra virgin olive oil
•6 garlic cloves, peeled and thinly sliced


Instructions

1. Grab a medium to large mixing bowl, add yogurt, ricotta, salt, pepper and mix well.  Combine EVOO and chopped garlic in cast iron or non-stick skillet. Cook at medium to medium low heat, frequently stirring until garlic changes to a beautiful golden hue range.
2. Immediately remove from heat to avoid burning (this cooks fast so keep your attention on it) and pour the garlic and its oil in the dip bowl and mix well. Refrigerate for an hour or overnight night in sealed container.
3. Before serving, cook up the crispy garlic chips. Set a mesh sieve over an empty bowl. Add EVOO to cast iron or non-stock skillet. Over medium heat let oil get hot but not smoking, add garlic slices, stir frequently, cook until golden. Pour into sieve set over bowl.
3. Drizzle garlic oil on top of dip, add garlic chips, taste to see if needs more salt and/or peppper. Enjoy!

Notes

  • can be made dairy free with substitutes for ricotta and yogurt (such as Kitehill Ricotta and Kitehill yogurt- greek plain)
  • can substitute olive oil for avocado oil
  • can double up on oil for garlic infusion to have more on hand.
  • can use a hand mixer or food processor for a smoother texture
