Description

Level up your next batch of deviled eggs with a pop of pink!! Move over toxic food coloring, all you need is nature’s jewel, the beet! Throw your peeled hard boiled eggs in a rose beet bath and allow them to soak.

Ingredients

Units Scale
  • 612 peeled and cooled hard boiled eggs

For Brine:

  • 2 cups champagne vinegar
  • 1 cup granulated coconut sugar
  • 2 cups water
  • 1 large raw peeled, sliced
  • 2 tsp black peppercorns
  • 1 tsp coriander seeds

Instructions

  1. Combine all ingredients into a pot and bring to a boil.
  2. Remove from the heat and allow to cool.
  3. Strain out beets, peppercorns and coriander seeds.
  4. Place eggs in cooled brine for 20min, rotating the eggs every 5 min for even dying.

Notes

Beet brine can be made ahead and stored in fridge.

Dye the eggs the day you serve the eggs. If you dye them ahead of time the beet juice will continue to soak all the way through the egg and not be as bright.

Highly recommend wearing latex when peeling and cutting the raw beets.
