- 10z bag of pre-cut cauli florets or head of raw cauliflower (bite size pieces, include the stems too)
- ½ cup potato starch
- ¼ cup almond flour
- ¼ cup gluten free @aleiasgf breadcrumbs
- 2 whole eggs beaten (for vegan alternate refer to “notes” below)
- 2 to 6 tbsp buffalo sauce mild @thenewprimal
- ¼ tsp of @celticseasalt
- ¼ tsp of ground pepper
- ½ tsp garlic powder
- 1 tbsp avocado oil
- Avocado oil spray
Instructions
- Set cauliflower in medium sized bowl. Use 3 separate bowls for starch, beaten eggs and combine flour, breadcrumbs, dry seasonings with a fork. Pre-heat air fryer at 350 for 3 min.
- In a separate small bowl mix avocado oil and buffalo sauce with fork.
- Add a heavy drizzle of buffalo sauce to raw cauli bowl and toss.
- Dip florets in starch first, then dip into the eggs and lastly coat in breadcrumb mix.
- Spray air fry tray with avocado spray. In a single layer, place bites in air fryer tray and spray with avocado oil.
- Cook at 370 for 8min, flip florets, spray again and cook for another 5min. Remove from tray, place on plate in a single layer to cool.
- Place cauli bites in a large bowl. Combine with buffalo sauce and coat. Add 2 tbsp at a time, keeping adding to your preference.
- If you plan to serve later toss with sauce when ready. Serve with fresh celery sticks and your fav creamy cooling dipping sauce.

Notes
- Can be made 100% vegan with adjustments to subbing out real eggs and using non-dairy milk mixed with either a few tablespoons of ground flaxseed or vegan mayo to thicken it
- Try to buy organic when you can.
- Aim to always use an oil with high smoke point especially avocado oil when air frying
