Ingredients

  • ½ cup raw unsalted cashews
  • 1 cup chunky salsa (medium)
  • 1 small/medium raw red pepper (chopped)
  • 2 tbsp nutritional yeast
  • ¼ celtic salt
  • ½ tsp ground cumin
  • 1/8 ground pepper
  • dash of paprika for garnish and color

Instructions

  1. Key step is to soak cashews in a bowl of warm water for a few hours (this will keep it creamy not grainy)
  2. Remove stem, seeds and rough chop raw red pepper.
  3. Drain and rinse cashews. Place all ingredients in blender except paprika.
  4. Serve at room temperature or warm in a saucepan with your favorite chip and garnishes. Salud!!

Notes

  1. Pre-heat queso on low heat in cast iron skillet or small sauce pan. You can microwave it as well but the edges will dry out when overcooked.
  2. Will save in sealed container, refrigerated for a couple of days. Stir before heating.
