- ½ cup raw unsalted cashews
- 1 cup chunky salsa (medium)
- 1 small/medium raw red pepper (chopped)
- 2 tbsp nutritional yeast
- ¼ celtic salt
- ½ tsp ground cumin
- 1/8 ground pepper
- dash of paprika for garnish and color
Instructions
- Key step is to soak cashews in a bowl of warm water for a few hours (this will keep it creamy not grainy)
- Remove stem, seeds and rough chop raw red pepper.
- Drain and rinse cashews. Place all ingredients in blender except paprika.
- Serve at room temperature or warm in a saucepan with your favorite chip and garnishes. Salud!!

Notes
- Pre-heat queso on low heat in cast iron skillet or small sauce pan. You can microwave it as well but the edges will dry out when overcooked.
- Will save in sealed container, refrigerated for a couple of days. Stir before heating.
